Ingredients:
1 pound Peeled Shrimp
2 Tbsp Lemon-grass fresh or frozen leaves (minced)
3 Tbsp Fish Sauce (use Vietnamese fish sauce)
1 piece Jalapeño (thinly sliced)
4 cloves of garlic
1 tsp fresh squeeze lemon
1 tbsp brown/white sugar
A bunch of scallion heads(thinly sliced)
3 Small shallots (thinly sliced): If no shallots available you can replace it with yellow onions.
1 tsp powder chilli pepper
1/2 tsp cayenne powder
Cooking Preparation:
In a heated frying pan, pour garlic/shallots first. Then followed by lemon-grass leaves. Stir till lemon-grass leaves turn brown. Add Jalapeño, cayenne powder, chili powder and scallions. Drop the shrimp fresh squeeze lemon and fish sauce. This time turn the heat up to dry up and stir, keep stirring and add sugar till the whole thing is a lil bit dried up. Top with fresh Cilantro or fresh mint leaves. Serve with Jasmine Rice. Hmmm Yummy i'm getting hungry myself. Enjoy!
