Chicken Breast with Seared Mushroom and Buttered Broccoli |
Ingredients:
- 1 Rotisserie Chicken cooked (or you can broil your own or use 2 Boneless Breast Chicken).
- 1/4 tsp. of McCormick Grill Mates
- 3 cloves of Garlic (minced)
- 20 pieces Whole Fresh Mushrooms
- 2 Crowns Fresh Broccoli
- A sprinkle of Basil or Parsley
- 1/2 Chicken Broth
- 1 tsp Butter
- A pinch of Creole salt or just plain salt.
Preparation:
Brown garlic in a heated pan, add fresh mushrooms and a pinch of McCormick Grill Mates. Let it brown both ends and set it aside.
In the same pan, pour the sliced broccoli and add a teaspoon of butter and a pinch of creole salt, cover and let it simmer a little bit till it is half cook. (I prefer my broccoli half cook).
On the other side burner, boil the chicken in a pot till it gets tender and cut it into bite size. (If you prefer rotisserie chicken, you will have to just heat the chicken with its own juice for better taste.)

Since my hubby doesn't like to eat rice, so his plate got everything but RICE.

And for my little man J, it took him a while to like veggies. So he doesn't mind having Broccoli but he won't eat mushroom. Although, he tried just a piece of it and he said he doesn't care much for it.
